Nilla Wafer Crusted Biscoff Blondies

Yes~I am a little late on the Biscoff Spread craze thats been going on for a while now but I was just not sure where I can get it~I was always curious about this European Spread? I always though that I would have to order it on amazon because I though that American stores did not have em. A few weeks a go a family member gave me a bottle and told me that you can buy them at sprouts~so took it home~tried it~and instantly I fell in love, HUZZAH!!!!! BISCOFF SPREAD HUZZAH!!!!!~It’s buttery with hints of Cinnamon and its made from European cookies~OMG~its delicious so immediately I had to bake with it~and this was created in my kitchen~Nilla Wafer Crusted Biscoff Blondies~A cookie butter like blondies well from the biscoff spread because basically it is a cookie butter spread with a vanilla wafer crust~the flavors of vanilla wafers and the biscoff spread just goes together so well in this blondie recipe~its chewy and moist inside with a crunch from the wafers that’s been process finely on a food processor~I let the Biscoff blondies speak for them selves~there is not alot of sugar in this recipe~about 1/2 cup of sugar because I did not want to looks the buttery~almost nutty with  hint of cinnamon taste of biscoff spread to disappear~It truly is delicious and a must make in the kitchen.


Nilla Wafer Crusted Biscoff Blondies

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 12 Bars


  • 1 Cup all purpose flour
  • 1 Cup Biscoff spread
  • 1/2 Teaspoon baking powder
  • 1/4 Teaspoon kosher salt
  • 1/2 Cup sugar
  • 2 Large Eggs
  • 1 Teaspoon Vanilla extract
  • 10 tablespoons of unsalted butter, soften, devided
  • 48 Vanilla Wafers cookies ground fine(Nilla Wafer Brand) (1 1/2 cup)
  • 2 Tablespoons of sugar ( wafer crust)


  1. Preheat oven to 350 degrees. butter an 8x8 inch baking pan, set aside. pulse the vanilla wafer cookies in a food processor till fine, melt 5 tablespoons of butter, mix melted butter onto ground wafer cookies with 2 tablespoons of sugar and press onto baking pan. Bake the cookie crust for 7 minutes, remove from the oven and let cool slightly.
  2. On a stand mixer cream soften butter and sugar till light and fluffy, beat in eggs one at a time, add vanilla extract and biscoff spread, mix till creamy. In a bowl combine the dry ingredients, with the mixer on low slowly add the the dry ingredients to the biscoff batter till combined, spread evenly on the baking pan and bake for 30-35 minutes or till a toothpick inserted on the center comes out clean~let it cool on cooling rack completely before cutting.
