October is here~yay~the only bad news is that fall is looking like a very hot season ughhhh~I was so looking forward to sweater season this year, but it looks like that will have to wait till the California weather becomes more cooler, I am hopeful that it will in the upcoming months. Pumpkin Season is here and Halloween is also coming which I am totally excited about~OMG~and Off course~PUMPKIN SEASON~I honestly look forward to this season every year~because all of the pumpkin recipes I make ( coming soon) and all the pumpkin desserts ohhh my~my mouth is watering but first: My Orange Balsamic marinade is an easy grilling weeknight recipe to make with any kind of meat~especially chicken breast that you don’t know what to do with~YEAH~ I would know~I get tired of cooking or rather grilling with chicken sometimes because it I’ve done so many recipes with chicken that I think at one point I just ran out of recipes to make and was very uninspired to cook but I am slowly getting my mojo back and hopefully fast because I have lots of pumpkin recipe to post this year  but that’s another post, anyway this is delicious marinade, it has rosemary, thyme and orange zest and blood orange flavored olive oil which I bough from my vacation with my husband up in Carmel Valley, which just adds another punch of orange flavor to the marinade, but dont worry if you dont have orange flavored olive oil, regular olive oil will work just find, besides a whole juice of fresh squeeze orange juice is enough with the added orange zest~this marinade is quite flavorful and delicious.

 

Orange Balsamic Marinade

Cook Time: 5 minutes

Ingredients

  • 3 Tablespoons Orange Flavored Olive oil or regular olive oil (extra virgin olive oil)
  • 3 Tablespoons Balsamic Vinegar(dark or white)
  • 2 Tablespoons Dijon Mustard
  • 2 Large garlic clove mince or 3-4 small garlic clove
  • 1 Sprig of Rosemary Finely dice
  • 3-4 Sprigs of Thyme Mince
  • Zest and juice of 1 Large Ripe Orange

Instructions

  1. In a bowl combine together, olive oil, balsamic vinegar, dijon mustard together, mince the herbs and garlic and whisk in the marinade, add the orange zest and orange juice and whisk all together to combine, marinade meat, pork or beef for several hours.
  2. Note: double the recipe if marinating more than 1 pound of any meat.
