First lunch of 2013 & AP Guacamole

So here we are, it’s 2013 and its a very very VERY cold morning, my hands are freezing and after having breakfast my BF ( boyfriend who shall remain anonymous for security reasons) are working hard to get my BLOG publish. I am sitting on the sidelines watching this all come to life, MY BLOG. I actually never thought I would have a blog let alone a food blog because it could not be done by someone like me ME, LOL. I am what you would call Technology incompatible (and that’s the TRUTH) when I am around technology I am a waking accident prone. My BF working diligently on setting up my blog and concentrating¬† very hard and me watching this all come to life in my very own eyes just paying attention and taking all this new found information in. So here is what we had for lunch: Chips & Guacamole. Enjoy.



First lunch of 2013 & AP Guacamole

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 4


  • 2 Avocados
  • 1 Large clove of garlic, minced
  • 1/2 of a red onion, finely diced
  • 1 serrano chilli, seeded and diced
  • Salt and Pepper, to taste
  • 1 half of tomato seeded and diced
  • 1/2 fresh Lime
  • cilantro
  • Tortilla chips of your choice


  1. Pit the avocados and scoop into a bowl

  2. Dice the garlic, onion and seeded serrano chili and mix in with the avocado

  3. Dice the tomato and cilantro (to taste) and add to the avocado mixture

  4. Squeeze the juice from 1/2 of a fresh lime and mix into the avocado mixture to taste

  5. Salt and Pepper to taste.

  6. Best if chilled for about 30 minutes before serving.

  7. Enjoy with your favorite tortilla chips.
