Dark Chocolate Mint Extreme Brownies

I don’t know why it has taken me this long to make something with mint, I love the flavor and it goes so well with chocolate, it gives it this nice fresh flavor especially if its paired with dark chocolate, seriously I mean, it was like a new discovery in my kitchen~WOW~luckily for me and for you I corrected that mistake of not having a mint brownie in my arsenal of delicious brownie recipes. My Dark Chocolate Mint Extreme brownies are just that~Cakey~Gooey~full of Mint flavors all througout  with Creme the mint chip pieces in the batter with a thick and deliciously minty Oreo Mint Cream Cheese frosting, can I just say~MINT OVERLOAD~MINT OVERLOAD~and pure bliss with every bite~now when I crave something minty and dark chocolate I can always me my dark chocolate mint extreme brownies~now say it with me again for the last time~MINT OVERLOAD~and really who cares if its fattening~I mean look at it~with its thick frosting on top~your diet is out of the window with this~but you weren’t watching your weight anyway so dive in. You know you want to.

Dark Chocolate Mint Extreme Brownies

Cook Time: 25 minutes

Yield: 12 squares

Ingredients

  • 1/2 Cup all purpose flour
  • 5 Oz Bittersweet Chocolate Chips
  • 3 Tablespoon unsalted butter
  • 1/4 Teaspoon kosher salt
  • 1/2 Teaspoon baking powder
  • 2 Tablespoon dutch process cocoa powder(cocoa powder is fine)
  • 3/4 Cup granulated sugar
  • 1/2 Teaspoon espresso powder
  • 2 Eggs
  • 1 Teaspoon Mint Extract
  • half a bag of Andes Creme De Mint Chips
  • Oreo Cream Cheese Frosting
  • 11 Oreo Mint Cookies Crushed
  • 4 oz Soften Cream cheese
  • 1 1/2 cup powdered sugar plus more
  • 1 Teaspoon mint extract
  • 3 Tablespoon soften unsalted butter
  • 1-2 Tablespoon of heavy cream or milk
  • 1/4 Teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees, butter and line an 8x8 inch baking pan with parchment paper that overhands on the sides.Set aside. On a double broiler melt 3 tablespoons of butter, add the bittersweet chocolate and melt and mix till smooth, remove from the heat and let cool slightly,sift flour, baking powder, cocoa powder and salt, in another bowl beat eggs till light and fluffy, add sugar and beat till mixture is thicken, add the dry ingredients including creme de mint chips and mix till combined, stir in vanilla,mix in the melted bittersweet chocolate till its combined,Spread evenly on the prepared pan and bake for 25 minutes, transfer to a cooling rack and let it cool for 30 minutes in pan, then remove and let it cool completely before frosting.
  2. Oreo Mint Cream Cheese Frosting
  3. Beat cream cheese and butter by hand with a whisk or with a stand mixer with the paddle attachment untill light and fluffy, add powdered sugar gradually and continue to mix till fully incorporated, add the mint extract and vanilla extract and continue to mix, fold in the crushed Oreo mint brownies till incorporated. Once brownies are cool completely frost the top with the Oreo Mint Cream cheese frosting evenly. Slice into squares and enjoy.
