Creamy Chicken Noodle Soup

Nothing is better than a warm bowl of soup on a cold night~Seriously~the past couple of days have been really cold and for me, that is really awesome because I live for the cold~I love cold weather, wearing jackets and sweaters and being all cozy when I go out~its just nice~better than being hot in the summer and sweating~This creamy chicken noodle soup was will warm up all your extremities and will give you a warm hug with every spoonful~because when its cold~have soup~it warms you up and you can have it for days~and in my house~especially this fall/winter month~soup will be abundant~ its creamy and hearty and a creamy take on chicken noodle soup because all thing creamy~I think is soo much more better.

Creamy Chicken Noodle Soup

Yield: 5-6

Ingredients

  • 1 Pound cooked boneless chicken breast(either shredded or dice up to you)
  • 2 Cup dry egg noodle(what ever shape you like)
  • 2 Medium carrots chopped
  • 2 Celery stalk chopped
  • 1 Medium yellow onion chopped
  • 3 Garlic clove mince
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 2 Dried bayleaf
  • 4 Tablespoon chopped parsley divided
  • 4-5 Cups of chicken stock ( low sodium)
  • 3/4 Cup of Milk(I uses 2%)
  • 3/4-1 Cup of heavy cream
  • Salt and pepper to taste
  • 2 Tablespoons olive oil

Instructions

  1. add 2 Tablespoons olive oil in dutch oven over medium heat, once hot add carrots, celery and onion and cool for 3-4 minutes until soft, add dried herbs( dried thyme, bayleaf, and oregano) the mince garlic and salt and pepper to taste and cook for another minute, add 3 tablespoons of parsley and cook for 30 seconds, add chicken stock and chicken breast, add the dried noodles and bring to a boil then simmer covered for 10 minutes or till egg noodles are cook through, add milk, heavy cream and 1 tablespoons of parsley and cook for another 5 minutes, add salt and pepper to taste, serve hot with butter toast of your choice.
