Chocolate Chip Cheesecake Bars

I love chocolate chip cookies, almost everyone in the whole entire world loves chocolate chip cookies~from kids to adults its like a cookie staple for everyone in every age right? well I love chocolate chip cookies too but I also love cheesecake~my chocolate chip cheesecake bars are like the best of both worlds~delicious chewy chocolate chip cookies with semi sweet chocolate chip and in between a nice cheesy cheesecake filling~chocolate chip cookies+cheesecake=absolute goodness~mouthwatering.

Chocolate Chip Cheesecake Bars

Yield: 12 Bars

Ingredients

  • 1 1/4 Cup all purpose flour
  • 1/2 Cup unsalted butter,room temperature
  • 1 Large Egg
  • 1 Teaspoon vanilla extract
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon kosher salt
  • 1/2 cup brown sugar, firmly packed
  • 1/3 Cup sugar
  • 1/2 Cup semi-sweet chocolate chips
  • Cheesecake
  • 8 oz Room temperature Cream cheese
  • 1/4 Cup sugar
  • 1 Large Egg
  • 1 Teaspoon vanilla extract

Instructions

  1. Preheat oven to 35 degrees, line a 8x8 inch baking pan with foil, butter foil and set aside. In a medium bowl whisk together flour, baking soda and salt, set aside,in a stand mixer fitted with the paddle attachment cream butter and sugars together till light and fluffy, add eggs and vanilla and continue to mix, in slow speed add dry ingredients just until combined, fold in chocolate chips.
  2. Cheesecake filling
  3. Either by hand with a whisk or in a stand mixer, cream together cream cheese and sugar, add eggs and vanilla and mix till combined.
  4. Assembly
  5. Take half of the chocolate chip cookie batter and press evenly on the prepared pan, spread the cheesecake filling on top evenly, take the remaining half of the of the chocolate chip batter and spread on top of the cheesecake filling, baked in the middle of the oven for 20-25 minutes until lightly brown on top and cheesecake is set. transfer pan to a cooling rack, let it cool completely on room temperature before cutting.
