Chipotle Citrus Marinade

This may come as a shock to most of you but I do cook, LOL, yes I know for the past couple of months, heck even years I have been focus on the sweeter side of AKA alot of desserts in my kitchen but I love cooking as well especially grilling, I grill more at least 2-3 times a week because its my favorite kind of cooking, mainly because I hate to get oil splatters on my kitchen stove, because honestly who want to clean and scrub all those oil splatters on your kitchen stove……….thats right ~NO ONE~ so I grill and my chipotle citrus marinade is a deliciously bright marinade that goes with any chicken, pork beef & fish, smoky and slightly sweet and full of flavor that is perfect for summer grilling~I use this marinade for a flank steak the other week and it was just so good. Hopefully I will be posting more cooking recipes in the up coming months, its just been so hard to find new recipes, and this one is a total keeper in my book, will make this marinade again.
Ingredients
- 1 Medium-large ripe orange, juiced
- 1 Lime, juiced
- 1 Heaping teaspoon of diced chipotle in adobo (you can find th at Mexican Isle)
- 2 Small garlic clove finely mince
- 1/2 Teaspoon cumin
- 1/2 Teaspoon coriander
- 1 Teaspoon chili powder
- Salt and pepper to taste
- 2-3 Tablespoon chopped cilantro
- 2 Tablespoon olive oil
Instructions
- Mix together in a medium bowl, add salt and pepper to taste, pour over meat and let marinade for 2-4 hours Max
