Cinnamon Cheesecake Topped Cinnamon Chip & Dark Chocolate Chip Cookie Bars

There is a rule in my house, you have to have dessert, yes that is a rule and is enforce daily in my household after dinner, you have to have some kind of dessert, a sliver, something small and sweet, does not have to be decadent or over the top but something sweet to tie the whole dinner evening. I started this whole dessert after dinner thing because I firmly believe that the reason to have dinner is to have dessert, its the most important  part of the meal, I firmly believe that ( I saw it in a movie once and I been fallowing that motto ever since lol) and thus I created DESSERT OF THE WEEK. Dessert of the week is my creation in my house. I make a dessert that will last for a week, weather its cookies, brownies, cakes, cupcakes etc. This past few weeks I been wracking my brain and thinking of what I can make for my blog since it will be the first DESSERT OF THE WEEK post for 2013 this new year, it has taken me some time but i finally did some research ( Yes I did my homework on creating my dessert lol) and I combine three things that I love, Cheese Cake, Cinnamon and Cookies and what  I created is something magical I think because its mine and I was a bit nervous of making this dessert recipe because, though I made alot of dessert from recipes that I like to make, creating one is hard I think, but once I made it and was successful I felt relieve. So You wanna know what it is I’ve created?

Cinnamon is now one of my favorite spice and it is actually one of the wildly use spice in my kitchen ( need to buy some more ground cinnamon this weekend) I love the spicy smell and the taste of cinnamon, I really really do. This hybrid of cheesecake and cookie bar is really good and the cinnamon flavor is all through out. The cinnamon chip adds bite and the dark chocolate adds bite and a slight bitter & sweetness that balances the whole bar I think. The Cheesecake part is also good as well, it has cinnamon and brown sugar which gives it the nice brown color, the cinnamon adds a nice spice to the cheesecake which I really love because I love Cheese cake and I love cinnamon and together the are match made in delicious dessert heaven.( I think I will make a Cinnamon Cheesecake recipe hmmmmm)

~It is so good its hard to just have one, you have to have another lol~ I made this on Saturday evening and did not have it till Sunday evening, the bar/cheesecake had to sit overnight in the fridge but over all it a great recipe for cinnamon lovers, cheesecake and cookie lovers alike because it combines all of them into one delicious dessert. YUMMY.

This recipe is very easy, it just had alot of step 1: butter and lined your 8×8 inch pan with butter and parchment paper that over hangs on the side ( This will make it easier on you to take out the cookie bar when it is cool and set) then butter the parchment, set aside.

Butter 8x8 inch pan

Combine the flour, baking soda, cinnamon and salt in to a medium bowl.

Mix Four, Cinnamon, Baking Soda and Salt

In a Stand Mixer fit with the Paddle attachment beat the butter and brown sugar till they are incorporated and smooth and fluffy.

Combine Brown sugar and butter

Add the egg and vanilla and mix till its smooth

Add One Egg

Add the Dry ingredients to the wet ingredients till just combined and add the cinnamon and dark chocolate hips, mix by hand with a rubber spoon. Add and press into prepared pan making sure it is even all through out.

On a Food processor pulse cream cheese and brown sugar together till they are combine and smooth, then add the cinnamon, vanilla extract, flour and sour cream and pulse till its combine and smooth ( scrape the sides in each pulse)

Spread Cheesecake Mixture on top of Cookie Mixture

Spread the Cheesecake mixture on top of the Cookie mixture evenly and bake. transfer to a wired rack, let it cool for a couple of hours at room temperature then transfer to fridge and cool overnight. Cut and serve. Enjoy with milk or coffee or what ever you like.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 12 squares


  • Cookie Dough:
  • 1 Cup of all-purpose flour
  • 1/3 Cup packed of brown sugar
  • 1/3 Cup of soften unsalted butter
  • 1 Egg
  • 1 Teaspoon of vanilla extract
  • 1/2 Teaspoon of baking soda
  • 1/4 Teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1/2 Cups of cinnamon Chips
  • 1/2 Cups of bittersweet chocolate chips
  • Cheesecake Mixture:
  • 1 8 Ounce of Cream Cheese ( Room temperature or not does not matter because it will be process in food processor)
  • 1/2 Cup packed brown sugar
  • 1 Egg beaten
  • 1 Tablespoon of all purpose flour
  • 1 Tablespoon of sour cream
  • 1 teaspoon of vanilla extract
  • 2 Teaspoon of ground cinnamon (heaping)


  1. Preheat Oven to 350 degrees, butter and line an 8x8 inch baking pan with parchment paper that over hangs on the sides.Set aside.

  2. On a medium bowl combine flour, cinnamon, baking soda and salt. Set aside.

  3. On a Stand Mixer fitted with the Paddle attachment, beat butter and brown sugar together till smooth and fluffy, then add the egg and vanilla extract and beat till incorporated.

  4. Add the dry ingredients to the wet ingredients on a slow speed just until its combined. With a rubber spoon or spatula mix the cinnamon chip and dark chocolate chips to the batter then transfer to the baking pan and press evenly.

  5. On a Food processor, combine cream cheese and brown sugar and pulse continuously till its smooth. Add the cinnamon, the beaten egg, vanilla extract, flour and sour cream, Pulse continuously till smooth then add on top of the cookie mixture evenly and bake in 350 degree oven. 30-40 minutes, till the the cheesecake starts to pull from the sides and they are brown. Transfer to a cooling rack and let it cool completely then chill overnight. Serve and Enjoy.
