Sausage Bacon & Spinach Florentine Pizza

HMMMMMMM PIZZA YUMMMMM………………… Ohh Yeah I love pizza, I mean I REALLY REALLY REALLY LOVE pizza. I have this love/hate relationship with pizza actually, but I do love it, I love it greasy, crunchy, saucy, cheesy and meaty, in all of its form but it is bread, and well I try not to eat to much of it. I have these urges to have pizza, order from pizzahut but I thought I should make one so I did. I been try to make more and more recipes that I make my self and this pizza recipe came to me quickly. I did not want to make a traditional pizza with tomato sauce and pepperoni because I’ve done that, I want to make something different because its my motto in the kitchen, “Try and make something new everyday” and I have to say that motto is getting pretty hard to execute but I like a challenge so I created a creamy Sausage, bacon & Spinach Florentine Pizza, Yes white sauce on pizza and man was this a hit in my house ( just me and my Boyfriend lol)

The Crust was crunchy and thin and not doughy this time, I made pizza’s before but this one is one of my favorites I think and its because the Pizza dough it self is thin and crispy. There are times when I like a doughy bready pizza but that is for dunking on Ranch hahahaha, Yes I love to have you know your typical Pepperoni, Sausage, Mushrooms & Bacon pizza(That’s what me and my baby order at pizzahut) and dip it in ranch and sriracha hot sauce( I LOVE this sauce, I use it on everything I swear, I even drink it when no one is looking lol well now you know) with some grated Parmesan and red pepper flakes on my pizza. The combination to me is so good and delicious and hot and creamy with the ranch and spicy with the Sriracha sauce and the pepper flakes and the grated cheese its so so good and greasy and bad for you good. This  pizza is bad for you good too because its full of sweet Italian Sausage, smoky bacon and that creamy spinach Florentine sauce is  good, no ranch dipping required lol.

Making Pizza at home is easy to me I mean I love to create recipes from scratch making pizza to me is easy, the dough was easy to make to as well because I let my Stand mixer do all the Kneading for me. The Pizza dough I use is thin pizza dough kind but you can certainly use store bough pizza or just regular pizza dough recipe, what ever you like.

Pizza Dough

I made the pizza dough ahead of time and I let it chill overnight. My Pizza dough Recipe makes two medium size pizza ( I use a 13 inch pizza stone that I had bought from target for 15 bucks) so I cut the pizza dough and wrap the second one with plastic wrap on a freezer ziplock bag for later use in the Freezer ( I think I will make a Philly Cheese steak style calzones, recipe coming soon)

First I cook my bacon on a 400 degree oven ( you can cook yours on the stove top, what ever you like and what ever is easiest for you) for 20-25 minutes till it’s crispy and I crumble them ( I use 4 slices you can use more if you like) and set aside.

Thaw my frozen spinach overnight in the fridge and then pop it in the microwave for a couple of seconds ( 30 second increments) then  squeeze out the juices with a kitchen towel.

Thaw and drain Spinach

Cook the sausages, I got Sweet Italian Sausages from my butcher shop, they make their own sausages and bacon and they are so so good, but feel free to use what ever kind of sausage you like, stick to Italian though.

Cook Sausage

Make the Sauce.  Dice 1 small garlic and 1 small shallot, Toss it in a medium sauce pan with 1 tablespoon of butter for a minute or two, then add 1 tablespoon of flour and whisk till sandy color paste, then slowly add milk and cream ( I use 1/2 cup of milk and 1/2 cup of heavy cream) salt and pepper, pinch of nutmeg.

Whisk till it thickens and bubbles on the sides appear then I add my cheeses, I use 1/2 cup of Parmesan Cheese, and 1/2 cup of Romano Cheese. Once the cheeses has melted then I add the Spinach. Now for the assembly of Pizza.

Roll out the dough in to a square or Round ( I use round because I bought a 13 inch pizza stone) till its thin. Mine was a lil over 13 inches.

Rolling the Pizza Dough

Leave an inch border and brush with olive oil. Add the spinach sauce and spread evenly, then the cook sausage and bacon, top with 13/4 cups of Shredded Mozzarella Cheese. I rolled my pizza dough in parchment paper with flour for easy transfer to My pizza stone.

Topping the Pizza

Place on a preheated pizza stone ( preheat pizza stone in a 500 degree oven for 15 minutes if using a pizza stone, if not then omit this part) or baking sheet and bake in a 500 degree oven for 12-15 minutes till pizza is golden and crispy ( Check pizza often, do not overbake)Sausage Bacon & Spinach Florentine Pizza2

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: one 13" Medium pizza


  • Crispy Thin Pizza Dough
  • 3 1/2 Cups of all purpose flour
  • 3/4 Cups of warm water( 110-115F) and 1/4-1/2 cup of room temperature water as needed
  • 1 Tablespoon of vegetable oil
  • 1 1/2 Teaspoons of active dry yeast
  • 1 1/2 Teaspoons of sugar
  • 1 Teaspoon of salt
  • Sausage, Bacon & Spinach Florentine Sauce
  • 1 to 1/2 pound of Italian Sausage
  • 1 Box of frozen and thaw Spinach
  • 1 Small garlic mince
  • 1 Small half of a shallot mince
  • 1/2 Cup milk ( more if sauce is too thick)
  • 1/2 Cup of heavy cream
  • Salt and Pepper to taste
  • 1 Tablespoon of Flour
  • 1 Tablespoon of Butter
  • Pinch of Nutmeg
  • 1/2 Cup of shredded Parmesan Cheese
  • 1/2 Cup of shredded Romano Cheese
  • 1 3/4 Cup of Mozzarella Cheese
  • Olive oil for brushing the dough


  1. Crispy Thin Pizza Dough

  2. In a Stand Mixer fitted with the dough hook, add water, oil, yeast, sugar and salt. Mix till yeast is dissolve.

  3. On low speed add flour and mix till dough is form ( add room temperature water as needed) Knead dough for 5 minutes then, place in a lightly oil bowl and let it rise on a warm place for 1-2 hours till the dough has doubled in size. Once the Dough has risen cut the dough in half and save the second one for later use in the freezer ( wrap in plastic wrap many times and place on a freezer ziplock bag)

  4. Note: at this point you can make the pizza, you dont have to chill the dough overnight, just let the dough rise again in a warm place for 30-40 minutes.

  5. Sausage, Bacon & Spinach Florentine Sauce

  6. Preheat oven to 400 degrees and place bacon on a cooling rack on a foil lined baking sheet and bake for 20-25 minutes till bacon is crispy then crumble or cut the baking in to pieces and cook on the stove top till all the bacon fat is rendered and bacon is crisp, place on a plate line with paper towels. Set aside. preheat oven to 500 degrees

  7. Remove the casings out of the Italian Sausages, crumble and cook on the stove top till its done. Set aside.

  8. grate the cheeses and set aside ( each 1/2 cup to equal 1 cup of cheese)

  9. In a medium sauce pan cook the mince shallots, garlic and 1 tablespoon of butter for a 1-2 minutes, on medium heat, then add flour and whisk till sandy color paste then slowly stream the milk and heavy cream and whisk till thicken and bubbling on the side. Add the Cheese and mix till its incorporated then add thawed spinach( If the Spinach Florentine sauce is too thick just add a bit of milk ) then set aside.

  10. Assembly of the Pizza

  11. On a flour surface roll out the dough to your desired ( round or squared) till its thin, brush the edges with olive oil.

  12. Spread the Spinach Sauce evenly on the pizza dough leaving an inch border, then add the Sausage, bacon and Shredded Mozzarella Cheese and bake on a 500 degree oven for 12-15 minutes ( check often so the pizza wont overcook) til the crust is golden. let cool for 5 minutes then cut and serve.

  13. Note: If using a pizza stone, preheat pizza stone in the oven for 15 minutes. If Not Omit this. Roll the Pizza dough on a floured parchment paper for easy transfer to pizza stone or baking sheet.
