Orange Pound Cake

~Happy Friday Everyone~

I know that everyone is looking forward for the weekend after a productive and tiring weekdays and I feel ya, I really really do especially for my baby who is working hard every day. On March 4th it was a national pound cake day and I was bum that I did not celebrate it with making my own pound cake, I wasn’t too upset actually to be honest I was made for a second then got over it. I finally was able to make a pound cake and my very first pound cake at that which made me really happy because I’ve made pound cakes before but never for me and my baby to just have for dessert, I’ve made pound cakes for other to give out for holidays and birthdays but never just to have for us so I was determined to  make one just for us. My Orange pound cake is super moist, super light and sweet, it is what I call a perfect pound cake for the summer months were its hot and humid, this pound cake is perfect for that, it’s fresh and not to sweet and Orange and I love oranges in cakes or just an orange LOL~ I made my pound cake with half cake flour for lightness and half almond meal for a bit of nuttiness and well extra lightness and its just perfect. I will definitely will be making this when summer rolls around because I gotta be honest with ya, I don’t like summer, its too hot and I sweat and I don”t like that~but this pound cake will make the summer months a bit more bearable ( Not to self: Make more citrus dessert on summer months)

Orange Pound Cake

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 8


  • Butter for greasing pan
  • 1 Cup of Cake Flour
  • 1 Cup of Almond Meal
  • 1 1/2 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Salt
  • 1 and Half a Stick Of Butter (12 Tablespoons) Soften
  • 1 1/4 Cup of Granulated Sugar
  • 3 Large Eggs
  • 1 Teaspoon of Vanilla Extract
  • Zest of 2 large Oranges
  • 1 Cup Of Orange Juice Divided
  • 1 1/4 Cup of Confectioner's Sugar


  1. Preheat the oven to 350 Degrees
  2. Grease a standard loaf pan( 9x5) with butter on all sides and line with a parchment paper that overhangs a bit on the sides for easy lift.
  3. In a Medium bowl combine flours, baking powder and salt together. In a stand mixer with the paddle attachment beat Butter and Sugar together in low speed until light and fluffy about 2-4 minutes. Add and Beat in the Eggs one at a time scrapping the bottom after each addition, then add the vanilla and orange zest, beat for 30 seconds. Divide orange just to 3/4 cups and 1/4 cups, saving the 1/4 cup for the glaze. With the mixer on a low speed add half of the 3/4 cups of orange juice and third of the flour, then add the rest of the orange juice and the remaining flour until combined, Pour over the pan and smooth the top. Bake for 45 Minutes to an hour or until a toothpick inserted in the middle comes out clean. Cool on a cooling rack for 10 minutes then remove, while its cooking mix 1/4 orange juice and the confectioners sugar together till combined. Using a toothpick poke holes in the pound cake and brush the Orange glaze, Use as little or alot as you like. Let the Cake Cool Completely.
