Grilled Chicken Field Greens Salad With Zesty Honey-Dijon Vinaigrette

Lately I been really just eating bad food~well not just me but me and my baby and I gotta be honest, I am the instigator of this~I’m the cook in the house and I should know better~I should be making meal plans for both of us to be eating more greens, more fruits and vegetables and less sugary artificial sweets but its very hard. I Love to try new food and new desserts and it gets the better of me so I think I just need to dial it down on the sugary sweets for me and my baby’s sake. Feeling motivated I made another sensational Salad for dinner, with simple Seasonings, a bag of Dole Spring Field Mix salad and a very VERY ZESTY Honey-Dijon Vinaigrette this salad sure is a winner~My baby raved about how good the Vinaigrette is and he is a traditionalist when it comes to dressings on his salad~just plain ranch and I moved past that because well I am very picky about my ranch dressing and not all ranch dressing is made the same or taste the same~I get that from my cousin, anyways eating healthy starts at the kitchen right so I promise to make more healthy meals in my kitchen, you will love the vinaigrette and its really good and can be use as a marinade for chicken, pork and beef, use any kind of meat you like for this I just use boneless skinless chicken breast with a simple salt and pepper as seasonings~easy healthy dinner~and for the salad~I use some cucumber because I love the freshness of them~snack tomatoes~they were so juicy and sweet that I had a few myself and grated carrots but you can use what ever vegetables you like and this salad has no cheese LOL.


Grilled Chicken and Field Green Salad With Zesty Honey-Dijon Vinaingrette

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 2-3


  • 1 Pound of Boneless Skinless Chicken Breast
  • Salt and pepper to taste
  • 5 oz Bag of Dole Spring Mix
  • 10.5 oz Snack Tomatoes slice
  • 1 Medium Carrot Grated
  • 1 Cucumber thinly slice
  • Zesty Honey-Dijon Vinaigrette
  • 1/4-1/3 Cup of Good Olive Oil
  • 1 Tablespoon of balsamic vinegar
  • 2 Tablespoon of Dijon Mustard
  • 2 Tablespoon of soy sauce
  • 2 Tablespoon of honey
  • Zest of 1 Lime
  • Juice of half of a lime
  • fresh ground black Pepper


  1. Preheat your grill and grill chicken till they are no longer pink. Let the chicken rest for 5 minutes, cut or shred ( Your preference) Set aside.
  2. In a Salad bowl combine Spring Mix, tomato slice, grated carrots and cumber and mix.
  3. Zesty Honey-Dijon Vinaigrette
  4. Combine all the ingredients together and mix well in a medium bowl. Dress the salad to your preference with homemade or store bought croutons. Enjoy.
