Zuppa Tuscana With Cream Cheese Biscuits

Biscuits and a Bowl of warm soup always go together I think. I’ve had this recipe for a while now and I can’t believe it has taken me this long to post it, you see, I use to be a big fan of Olive Garden where when you eat there its family, that’s their slogan right? One of the main reasons why I loved Olive Garden is Their all you can eat Soup and Salad deal~ARE YOU KIDDING ME~ when I was young and naive I loved this deal, I mean me and my cousin would go on weekends  and pitch in together to get their all you can eat soup and salad combo and we loved their zuppa Tuscana~I mean this soup was AMAZEBALLS like I had a euphoric experience with this soup,  its that good and their Garlic Bread ughhhhhhhh~carb heaven~I mean 40-50 minute wait on weekends was somewhat worth it for this. Now that I am Grown Up and much more wiser and somewhat aware~I realize that Olive Garden is like the bottom of the Good Italian restaurant and this open my eyes, Their Pasta is overcook and I hate mushy pasta~I know that now~all their cream sauces are the same and are really really oily and nasty~and their Salad has soo much salt in it its practically an ocean~eeeeeeeek so I’ve stop going to Olive Garden~its been 2-3 years since I’ve gone to Olive Garden but their soup holds a place in my kitchen heart~their Zuppa Tuscana is the only one good thing about then and now I can make it at the comfort of my home~I am sharing it with you.

Zuppa Tuscana

This is a very VERY hearty soup~full of potatoes, smoky thick bacon, sweet and hot Italian sausage and spinach for a bit of green.

Cream Cheese Biscuits

These Delicious and sinful Biscuits that I accompany with my Awesome soup is Flaky, light, Crispy on the outside and soft on the inside~well I will not take credit for~this biscuits will go with any meal not just soup. Go to Baked Bree to get the recipe it will become your number 1 go to biscuits~

Zuppa Tuscana & Cream Cheese Biscuits

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Yield: 6-8


  • Package of Sweet or Hot Italian Sausage
  • ( I use half sweet & half hot)
  • Bag of Spinach
  • 4 Small Idaho Potatoes or 2 Large Idaho Potatoes burshed, skin on and Dice
  • 4-5 Cups of Low Sodium Chicken Broth
  • 1 Cup of Heavy Cream
  • Salt and pepper to taste
  • 1 Large White Onion Dice
  • 3 Large garlic Clove mince
  • 1 Tablespoon of Red Pepper Flakes
  • 4-5 thick pieces of good smoky bacon


  1. preheat oven to 400 degrees and Line a baking sheet with foil and a cooling rack~place bacon and bake to your desired crispness about 20-25 minutes, keeping an eye out not to over cook them.Once Cook and cooled crumble, set aside. Dice the Onion, garlic and potatoes and set aside. in a large pot heat 2 tablespoons of Olive oil, remove the casings out of the sausage and cook, making sure to crumble and saute the sausage with a wooden spoon, remove the cook sausage with a slotted spoon, set aside. add the dice onions and cook till translucent, add the garlic and continue to cook for a minute or so(add a tablespoon of olive oil if necessary) scrape down the bottom to get the brown bits off. Add the Chicken broth and bring the pot to boil, Add the potatoes and stir, cover the pot and let the potatoes cook for 10-15 minutes. Add the Sausage, crumbled bacon and stir, add the heavy cream and spinach and stir, add salt and pepper to adjust the taste of the soup. Serve hot with biscuits or bread.
