Lemon & White Chocolate Oatmeal Cookies

~Ok~I have been really silent for the past 2 weeks and I have no excuse mainly because I just been really lazy on posting some of my new recipes that I have made~but not anymore~I apologize but I will not feel guilty. Lets get down it, my newest concoction in the kitchen this time is a an oatmeal cookie, opting for white chocolate instead of raisins( Frankly because I don’t really much care for raisins) and chocolate chips  and adding some nice freshness to the old  Oatmeal cookie~flakes of Lemon zest~hmmmmmmm it is really refreshing to when you take a bite~lemon permeates all the way through the cookie with the sweetness of white chocolate chips~and that icing is that coats it as well~I kid you not I just made a really good summer treat~light and a bit healthy and full off freshness in a cookie~yes~you don’t really get freshness and oatmeal cookies in the same sentence let alone in the same room so~HORRAY~for me for adding thoss two together.

Tip 1: Use a tablespoon ice cream scoop to for the perfect size oatmeal cookies, they wont spread out much when baking.

Tip 2: When the cookies are done baking in the oven let them sit on the baking sheet for 7 minutes~then let them cool completely on a wire rack~once cool spread some lemon Icing~

Lemon & White Chocolate Oatmeal Cookies

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: 2-3 Dozen


  • 8.2 Ounce All Purpose Flour
  • 3 Cups old fashioned oats
  • 1 Cup granulated sugar
  • 1/2 Stick unsalted butter, soften
  • 1/4 Cup sour cream
  • 1/2 Cup packed brown sugar
  • 2 Eggs
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 2-3 Lemon zested
  • Lemon Icing
  • 1 1/2 Cup sifted powdered sugar
  • 1/2-1/4 cup of lemon juice


  1. Preheat oven to 350 degrees
  2. Line baking sheets with silpat or parchment paper. In a medium bowl combine granulated sugar and lemon zest till sugar is fragrant. In another bowl combine flour, baking soda and salt. In a Stand Mixer fitted with the paddle attachment beat together butter and sour cream, add the lemon sugar, brown sugar and beat till its fluffy. Beat in the eggs one at time then the vanilla, in low speed add the flour till just combined. Turn off the mixer and add the Oats and white chocolate folding them into the batter( do not overmix batter)
  3. Spoon a tablespoon of batter to the cookie sheet and bake for 12 minutes till the edges are brown, let the cookies cool on the pan for 7 minutes then remove from the pan and transfer to a cooling rack to cool completely.
  4. Lemon Icing
  5. combine lemon juice and powdered sugar together in a medium bowl to your desired consistency. When Cookies are cooled spread icing to cooled cookies and let it set for a few minutes. Eat and enjoy
