Soft tacos are probably one of the easiest meals to make really, all you need is some cooked, dice meat~cheese~Salsa and off course corn or flour tortilla and your set~soft taco meats can go from beef, pork chicken or if your vegan vegetables but over all soft tacos are very versatile and easy to make. My soft tacos are just like that easy~adding lots of flavor to the meat with a rub that is slightly sweet and fragrant but still has the essence of Mexican flavor. While taco meat is important the filling is also important as well~I went very simple with just some shredded mix cheese from the grocery store, store bought Pico De Gallo and my Guacamole & Sour cream.

You can have shredded lettuce, slaw, re-fried beans…… I mean fillings for soft tacos are endless and fun because you can play with your food~that is always fun haha.These sweet pork tacos are delicious~using Country-Style Pork bonless ribs for meat filling~soft and tender~it is to die for and believe me~this is good~I am still full from last night~lol

Country-Style Boneless Pork Ribs Soft Tacos

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 6-8

Ingredients

  • 3 Pounds of Boneless Country-Style Pork Ribs 1 inch Thick
  • Corn Or Flour tortillas
  • Homemade or Store bought Pico De Gallo
  • Homemade or Store bought Guacamole
  • Sour Cream
  • Shredded Cheese of your choice
  • Rub
  • 1 Tablespoon ground cumin
  • 1 Tablespoon packed brown sugar
  • 2 Teaspoon kosher salt
  • 1 Teaspoon chile powder
  • 1 Teaspoon ground coriander
  • 1 Teaspoon dried oregano
  • 1 Teaspoon ground ancho chile powder

Instructions

  1. In a small bowl mix cumin, brown sugar, kosher salt, chile powder, coriander, oregano and ancho chile powder and mix well, rub and coat all sides of the meat and let it marinate for 1-2 hours. Preheat the BB-Q Grill and cook the country-style ribs till they are no longer pink~let it cool for 5 minutes before dicing~serve with your favorite tortillas and fillings~Enjoy~
