Mexican Inspired Chicken Tortilla Casserole

Here is another honesty moment right here~I don’t make alot of casseroles~why?~you ask well~it because they tend to be more for a big family meals and in my house hold there is only 2 so a casserole is something that I try to avoid in making, for one thing we don’t really eat left overs in my house and its not because that the dishes I make aren’t good on the second day~its just that  we forget lol~that’s the main reason and the other reason is I like to make something new on the week days for dinner. I came across this recipe a few months ago from Tracey from Tracey’s Culinary Adventures and boy she has alot of really really good recipes~anyways~Chicken Tortilla Casserole for two from Tracey’s looked delicious and for two~I was like HELL YEAH!!!!~I am going to make this~I did and once before and I must say~WOW~this recipe was good~delicious~but this recipe is for more than two people~I mean~it was certainly alot for two to have I think~or should I say its a hearty dish for two people~but here I am again~but this time I decide to make this recipe and add my little flair to it~the recipe originally had it be cook on the stove top with chicken to finish cooking~but I decide to add a rub on the chicken and to grill it  to level up the flavors of this delicious casserole~and its a success~full of Mexican inspired flavors~crunchy tortillas~heck its smorgasbord of Mexican inspired goodness that recalls a crunchy chicken taco but in casserole form~

The Ingredients are simple and this dish is also budget friendly~One red onion~One tomato~2 garlic cloves~2 cups of chicken broth( low sodium preferred) and either your left over Tortilla chips of fresh tortilla Chips~&~2 Chicken breast( Or 1 chicken breast cut in half is what I use) don’t forget the shredded cheese(Sharp Cheddar or Mix~is fine)~see few ingredients to feed a crowd of 4 at least(or if your like the original recipe above two large hearty portions for 2) and you can even add some refried beans, a dallop of Sour cream~you are good to go~dinner is serve~Casserole style~

 

Mexican Chicken Tortilla Casserole

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4-6

Ingredients

  • Mexican Rub
  • 1 Tablespoon ground cumin
  • 1 Tablespoon packed brown sugar
  • 2 Teaspoon kosher salt
  • 1 Teaspoon chile powder
  • 1 Teaspoon ground coriander
  • 1 Teaspoon dried oregano
  • 1 Teaspoon ancho chile powder
  • Casserole
  • 1 Big chicken breast cut in half( or 2 chicken breast)
  • 1 Tablespoon canola oil
  • 1/4 Cup mince red onion
  • 2 Garlic cloves minced
  • 2 Cups low sodium chicken broth
  • 5 Cups tortilla chips broken to pieces
  • 1 Tomato, cored, seeded and chopped
  • 4 Oz cheddar cheese, shredded
  • 2 Tablespoon fresh parsley

Instructions

  1. In a bowl combine the rub and ingredients. Coat the chicken with the rub generously leaving 1 Tablespoon for later use. Grill the chicken in your preheated BB-Q grill till the chicken is no longer pink and its fully cook. Once chicken is cooled to handle dice or shred. Set aside.In a 9-10 inch Skillet~heat oil to medium heat and cook onions and garlic for a 1-2 minutes till onions and garlic are soft and fragrant, add the chicken broth (1 3/4 cups of chicken broth~save 1/4 if the mixture seems a bit dry) and bring to simmer, add 1 tablespoon of the rub, mix in half of the tortilla chips,the dice chicken, half of the shredded cheese and mix. Transfer to a 8-9 inch oven safe baking pan and add the rest of the tortilla chips, tomatoes, and parsley and gently mix to combine. Spread the remaining cheese on top.
  2. Preheat your broiler and place the pan under the broiler 6 inches from it~for about 2-3 minutes~Serve hot with the remaining tablespoons of parsley~
  3. Note: You may have left over Mexican rub~just save it in an air-tight container for another recipe~
