For the past few weeks I’ve been less than motivated to cook anything with chicken, honestly because its what I mainly cook every day, I’ve also had reach a point where I started to run out of creative inventive ways to cook with chicken breast that is delicious and full of flavor~Ughhhhhh so you can say I was kind of in a cooking slump, Lucky for me my baby had is up and coming vacation and we took a little trip to San Diego for a day or two and I had alot of fun~ and for the first time i went to the San Diego Zoo.

It was soo much fun~the Zoo is well kept, the animals are have room, I just had a blast, we also went to the beach which was fun and calming to see the ocean waves crashing~feeling the  sand you know. all that stuff and it rejuvenated me on cooking with chicken again, well with cooking actually. Parmesan And Romano Pancko Crusted Chicken Breast with Roasted Garlic Romaine

This is a really really easy and budget friendly~figure friendly easy week night meal to have because it’s a two in one~you get a side and the main dish all in one and it takes 15 minutes to make. Parmesan & Romano cheese with panko crust goes gives this nice chicken breast a delicious make over and with the roasted garlic Romaine it is a delicious light meal to have either as a light lunch or a light dinner~figure friendly~no deep or light frying~everything just goes in the oven~this also means little mess to be made in the kitchen ( LOL My kind of meal) with a side of lemon wedge to squeeze over the chicken and romaine its heaven on a plate ( I dont know how many times I have use heaven in my blog but it is) and again it takes no time at all to make~It will make your kitchen hot because of the oven but~you can spare a little heat after all fall is coming in a few weeks.

Parmesan And Romano Panko Crusted Chicken Breast with Roasted Garlic Romaine

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

  • 2 Thick Chicken Breast Cut in half
  • Salt and Pepper
  • 1/2 Cup Panko Bread
  • 1/4-1/3 Cup Grated Parmesan/Romano ( I use Kraft Parmesan/Romano grated Cheese)
  • 2 Tablespoon Italian Parsley
  • 2 Garlic Cloves, grated, divided
  • 3 Tablespoon extra virgin olive oil, divided
  • 2 Large hearts of Romaine, Cut lengthwise


  1. Preheat Oven to 450, place foil on baking sheet. Salt and pepper Chicken Breast, set aside. In a small bowl combine panko bread, 1 grated garlic, salt and pepper, cheeses, chopped parsley and 1 Tablespoon of olive oil. Pat on to Chicken breast and bake in the the preheated 450 degree oven for 10 minutes or till the panko bread gets slightly golden. add the remaining tablespoon of olive oil to hearts of romaine with grated garlic, salt and pepper. after 10 take baking sheet out and add the season romaine and bake for 5-6 minutes or till the romaine is browned on the edges and wilted. Garnish with lemon wedges or drizzle of good creamy Caesar salad dressing.
