Chicken Cacciatore

There is a sudden chill in the air when my baby( husband to be) and I wake up in the morning~the cool air because its fall season, I love waking up in the morning knowing that it’s going to be some what grey and cloudy outside and the wind is blowing~I think fall is the most wonderful time of the season and because you can be cozy in a sweater. The Hubster still tells me to hold my breath because California fall never gets that cold but~in all honestly I am holding my breath because I want to wear sweaters & Jackets when it gets that cold hahaha but I shall be patient. This Easy Chicken Cacciatore is not a fall recipe but its delicious and has a vibrant color like fall~I never cook chicken cacciatore before and I know there is different versions of this recipe out but I  decided to make  an easy version~delicious and easy is what I was going for and a one pot wonder~you can serve this up with a side of mash potatoes my hubby’s favorite or pasta~I opted for non because the chicken piece that we have gotten from our butcher shop were so huge that we did not need any sides~Hope you like this dish it is an easy dish to make and super good.

 

Chicken Cacciatore

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 4

Ingredients

  • 4 Chicken thighs, skinless
  • 2 Chicken breast, bone in, skinless
  • 1 Large onion dice
  • 1 28 oz Can Dice tomatoes in juice
  • 6 Garlic Clove minced
  • 1 1/2 Teaspoon dried oregano
  • 1 Cup low-sodium chicken broth
  • 3 Tablespoon drained capers

Instructions

  1. Salt and pepper chicken on both sides, dredge lightly in flour. In a Dutch oven heat 2-3 tablespoons of olive oil on medium heat, brown chicken in all sides, about 5-8 minutes. Transfer to a plate. Add Onions, garlic and oregano and cook onion till they are soft and tender, about 5 minutes. Add tomatoes with juices, broth and capers, return chicken and simmer for 30 minutes till the chicken is cook all the way through. Sprinkle basil, serve warm. Enjoy
