Chicken Schnitzel

Well it was raining last night here~in Whittier California~it was nice to finally see rain~I love it when it rains because after the rain~the smell of fresh rain dew is refreshing and nice~its all cloudy and grey which I happened to love and would prefer than the sun being out.There is one celebration I forgot completely last year to celebrate and now I am making up~OCTOBERFEST~hahaha~I heard about it you know~I been to places that celebrate OCTOBERFEST but really I was never let my self immerse in the celebration because it involves alot of drinking~and if you know me~and know me well~I don’t really drink~ but I decided to celebrate Octoberfest with German food~its not just beer but~Bratwurst~all kinds of German Sausages that I have not tasted yet but will soon I hope, and this one~Schnitzel~now from what I know~from traditional Schnitzel is that its made of veal~but I chose chicken instead because well I had chicken hahaha~ This by the way has to be like one of the easiest chicken meal I have made~except for the mash potatoes( not instant this time hahaha) I coated my with panko bread because its light and less heavy than bread crumbs and its pan-fry which I hardly ever do~so I splurge a bit and they are awesome and delicious~Note: Make some sort of gravy or serve with a lemon wedge~next time~to take it up from a delicious meal~to Awesome~I serve mine with mash potatoes but by all means serve this with what ever side dish you like~its perfect~and crispy fried~two things we all love~here is to OCTOBERFEST~

 

Chicken Schnitzel

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 4

Ingredients

  • 2 Thick Chicken breast cut in half and pounded
  • to 1/8 thickness
  • Salt & pepper
  • 1-2 Cups panko bread
  • 1 Cup whole wheat flour( all purpose is fine)
  • 2 Eggs beaten
  • 1 tablespoon of grainy mustard
  • 2-4 Tablespoons vegetable oil, or canola divided
  • 2-4 Tablespoons unsalted butter, divided
  • Lemon wedges(optional)

Instructions

  1. Preheat oven to 200 degrees, Line baking sheet with a cooking rack, Pound each half chicken between parchment papper to a 1/8 thickness. Salt and pepper each side.In 3 separate shallow plates( pie tins work well) place 2 scrambled egg in one, whole wheat or all purpose flour in the other, and on third the panko breading.In the scrambled eggs add 1 Tablespoon of mustard and mix. Place pounded chicken breast into flour shaking off any excess, then coat in egg, and lastly in panko bread. In a medium skillet add 1 tablespoon of oil and butter, on medium-high heat~cook chicken until golden brown on both sides(5-6 minutes each, less on the other side) Place cook chicken in a paper towel line plate, then place in the oven too warm. wipe pan with a paper towel of any excess bread crumbs and oil and repeat.Serve with your favorite side. Enjoy
