Saturday Evening while I was in bed I could not sleep~ughh~I seriously hate those days when your trying really hard to fall asleep and stupid thoughts gets in the way of that~It’s was a bit frustrating for me sleeping on Saturday night~when its cold outside and in your bedroom but for some odd reason my body was radiating soo much heat that I was sweating~another annoyance of not  being able to sleep~so I was basically awake~WIDE AWAKE~When Sunday Morning came~My Hubby woke up early to go shooting with his buddies~while I was in bed trying to get at least another hour~but decided to just get up and greet the day and make Scones for Breakfast.

Scones~I love scones~I do~ they are like biscuits but better~because you can add any filling and they are so perfect for breakfast or brunch~they are tender~flaky~crispy~gems of delight~and I decided to make chocolate chip scones~I had some mini~chocolate chips in my pantry and decided to use them~I have like half-empty bags of all kinds of chips in my pantry that I really need to use up. Anyways these by far are my favorite kind of scones~studded with mini flakes of chocolate chips~Buttery perfection and its crunchy and tender~A scone that is perfect~I think in every way. The Breakfast of the week are these goodies right here~spread a bit of butter or your favorite fruity spreads like~Orange marmalades~Jams and preserve~WOW~with a side of tea or coffee~ANOTHER ONE OF MY HEAVENLY BREAKFAST CREATION~

Chocolate Chip Scones

Prep Time: 10 minutes

Cook Time: 16 minutes

Total Time: 26 minutes

Yield: 10 Scones


  • 2 Cups all purpose flour
  • 3 Tablespoon granulated sugar
  • 1/2 Teaspoon kosher salt
  • 1 Tablespoon Baking Powder
  • 2/3 Cups mini semi-sweet chocolate chips
  • 8 Tablespoon unsalted butter, cold cut into cubes
  • 2/3 Cups heavy cream cold
  • 1/2 Teaspoon vanilla extract
  • 1 Large egg


  1. Preheat oven to 375. Line 2 Baking sheets with Parchment paper or silpat. In a bowl Sift flour, baking powder, salt and sugar. Add cold butter to flour mixture, and cut the butter into the flour till it resembles course pea size crumbs with hands, pastry cutter or 2 knives. Stir in the mini chocolate chips. In another bowl combine the egg, heavy cream and vanilla extract, add to the flour mixture and mix with a wooden spoon till it barely holds a dough. Transfer to a flour surface and shape to a rectangular shape( That makes 10 scones, or any shape that you like but cooking time will vary) Cut the scones in half and cut into smaller rectangles and bake in the baking sheet a few inches apart for 16-17 minutes ( 17 minutes on a stainless steel pan~16 minutes on a grey non stick baking pan) till golden brown on the edges~ place the pan on cooling rack and let cool in the pan slightly (5 minutes) transfer to cooling rack to cool completey or serve hot with your favorite spread, jams, preserves & Marmalade.
